Muhammara flatbread is an open pastry: bread dough rolled out to the size of a small pide and spread with a red pepper mixture before baking. It is cooked in a tannour, on a saj or in an oven. In the neighbourhood bakeries of Damascus it sits on the same shelf as the zaatar, cheese and spinach rounds, known as qurs, and it is part of breakfast and the quick morning bite.

Why the name is confusing

In Syria, muhammara names three different things. In Aleppo it is a mezze dip of walnuts and pomegranate molasses. In Qamishli it is a winter pepper paste. At the bakery it is dough spread with pepper. What they share is the reddish colour, which is where the name comes from. This entry is about the bakery version. What is spread on top

The most detailed recipe comes from the tannour ovens of Deir ez-Zor. The round is kept smaller than ordinary bread and the dough is thinned. On top goes a mixture of finely chopped onion, spices, hot red pepper and tomato paste. When it comes out of the tannour, it is brushed with a little olive oil or village ghee. The proportions can change from one region to the next.

Where it is baked

All over the country. In Raqqa there is a kind of tannour bread spread with muhammara. In the wood-fired tannours of Masyaf it is sold alongside zaatar and cheese rounds. In the Latakia countryside, before Eid al-Fitr, women at the tannour make muhammara fatayer together with zlabiyeh fritters, and hand them out to whoever comes to the door.

Damascus is where it is most visible. In 2023 it appeared as its own item in the governorate’s official price decision, beside the cheese, zaatar and spinach rounds. Damascus University sells a saj muhammara, baked on the domed griddle.

How it differs from manakish

Same dough, different topping. The familiar manakish is zaatar or cheese. On the muhammara flatbread the topping is red and leans hot, with onion and tomato paste. The two often sit side by side at the bakery, so it pays to ask for each piece by name.

  • Ask for muhammara at a bakery and you get the pepper-spread dough, not the Aleppo walnut dip
  • The mixture can include hot red pepper; ask first if you do not want heat

  • In Qamishli muhammara means winter pepper paste, so say clearly what you want there
